Last year we made a whoopsie and had to get creative to right the ship. What progressed was a barrel aged gin that was absolutely delicious and turned into one of our favorite products.
Since we have a never-ending desire to do things differently, we decided to hold a little experiment. What would aging gin in a barrel that previously aged mead do to the spirit? The result was one of the most interesting and divine gins we have ever had. All the honey influence from the mead absolutely translated to final spirit with a lovely sweetness on the finish that doesn’t come across as cloying but decadent.
Try this in your favorite gin cocktail *cough negroni* or pair it on its own with some artisanal goat cheese. Special thanks to our friends at Zymarium Meadery for providing us with another exceptional barrel to play around with.
