And when we found Zymarium, one of the world's most acclaimed meaderies, we knew we had discovered something truly exceptional. Nestled in our own backyard, Zymarium is led by the brilliant Joe and Ginger Leigh, who craft world-class meads using not only local Florida honey but rare varieties sourced from apiaries across the globe. Their dedication to the art of fermentation and terroir-driven honeys creates a kaleidoscope of flavors that redefine the possibilities of mead.

One of their most revered creations, Endless Banana, is a bold statement in simplicity. Made with nothing but bananas, honey, and more bananas—no water added—this mead ferments over time before aging in a used bourbon barrel. After nearly a year of maturation, the mead is bottled, leaving behind a barrel steeped in rich, unique flavor.

We couldn’t resist the opportunity to bring that flavor forward. Without hesitation, we racked two of our finest bourbons—Journeyman Wheated Bourbon and J. Henry’s Four-Grain Bourbon—into the empty mead barrels, allowing the summer months to coax out the deep, layered notes of honey and banana
